Aromas of plum and blackberry fruit jump out of the glass. The palate is full of juicy berry flavours with a hint of oak and finishes with soft silky tannins making this a very easy drinking red.Fruit batches were fermented separately in 10 tonne stainless steel fermenters reaching temperatures up to 25 - 27°C. They remained at this temperature for about 2 days to maximise extraction of colour, flavour and tannin before cooling to 22°C for the remainder of the fermentation process. Varieties were then matured separately in a combination of stainless steel and 1-3 year old American and French oak Hogsheads for 6 months prior to bottling.this Shiraz Cabernet is great with pizza while watching the footy or with a BBQ during the summer months.
